Spinach-Mushroom Scramble
It's no yolk. There are plenty of ways to liven up those egg whites. Toss in some spinach and mushrooms for a veggie delight. It is definitely all it's cracked up to be.

- 1 cup(s) egg whites
- 1/8 teaspoon(s) salt
- 1/8 teaspoon(s) pepper
- 1/2 tablespoon(s) olive oil
- 1/2 cup(s) sliced mushrooms
- 1/2 cup(s) spinach, chopped
- 1/8 cup(s) reduced fat cheddar cheese
Directions
- In a small bowl, whisk egg whites, salt and pepper.
- In a nonstick skillet, heat olive oil over medium heat.
- Add mushrooms and cook for about 5 minutes.
- Add spinach and cook until wilted.
- Reduce heat and add egg mixture.
- Add in cheese and stir for 1-2 minutes until melted.
- Serve hot.
