Healthy Greek Salad

- 1/4 cup(s) fat- free reduced sodium chicken broth
- 2 tablespoon(s) red wine vinegar
- 1 teaspoon(s) sugars, granulated
- 1 teaspoon(s) dried oregano
- 3/4 cup(s) olive oil
- 1/8 teaspoon(s) salt
- 1/8 teaspoon(s) pepper
- 16 ounce(s) ( 4 oz each ) boneless skinless chicken breast halves
- 1 cooking spray
- 6 cup(s) fresh romaine Lettuce, Chopped
- 3/4 cup(s) cherry tomatoes, halved
- 1/2 cup(s) red onions, thinly sliced
- 1/2 cup(s) cucumbers, peeled and sliced
- 1 cup(s) fat free crumbled feta cheese
- 16 black olives, pitted
- 2 tablespoon(s) scallions, chopped
- 1/2 tablespoon(s) dried basil
- 3 teaspoon(s) garlic, finely chopped
- 1 teaspoon(s) thyme
- 1/8 teaspoon(s) cayenne pepper
Directions
- Prepare grill or broiler.
- Combine the chicken broth, red wine vinegar, sugar, salt, oregano and olive oil in a small bowl.
- Brush the chicken with 2 tablespoons dressing; set remaining dressing aside.
- Place chicken on grill rack or broiler pan coated with cooking spray; cook for 5 minutes on each side or until chicken is done. Cut into 1/4-inch-thick slices.
- In a large bowl, combine lettuce, tomatoes, onions, cucumbers, feta cheese, olives and scallions.
- Add remaining dressing, basil, garlic, thyme, black pepper and cayenne pepper.
- Top with sliced chicken.
- Serve immediately.
