Kickin’ Sweet Potato Fries

Sweet news -- you can indulge in fries and still follow a healthy eating regimen. A modified version of everybody's favorite side, these sweet potato fries have so much appeal it's not even funny. 

Kickin’ Sweet Potato Fries

  • 5 sweet potatoes
  • 2 egg whites
  • 2 teaspoon(s) garlic powder
  • 1 teaspoon(s) paprika
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) pepper
  • 1 teaspoon(s) chili powder
  • 1 cup(s) panko bread crumbs
  • 1 cooking spray

Directions

    1. Preheat oven to 450 °F.
    2. Bring a large pot of water to a boil. Place potatoes in boiling water and cook for 5 minutes.
    3. Drain and plunge into a bowl of ice water. Dry the potatoes well.
    4. Slice potatoes into 1/4-inch-thick matchstick slices.
    5. In a medium sized bowl, combine egg white, garlic powder, paprika, salt, pepper and chili powder.
    6. Toss potato slices with egg white mixture and then dip them in panko bread crumbs.
    7. Spray a large baking sheet with cooking spray. 
    8. Lay the sweet potatoes on the baking sheet.
    9. Bake for 12 minutes.
    10. Turn them once and bake for 8 more minutes until tender.
    11. Serve warm.
