Refried Black Beans

- 2 cup(s) dried black beans, washed
- 64 floz water
- 2 garlic cloves, minced
- 1 teaspoon(s) salt
- 1/2 teaspoon(s) black pepper
- 1 tablespoon(s) vegetable oil
Directions
- Place the beans and water in a large pot and bring to a boil.
- Cover, reduce to a simmer and cook for 1 hour and 20 minutes.
- Crush the beans in their liquid with a potato masher or the back of a large spoon.
- Cook garlic, salt and pepper in oil in a skillet over moderate heat, stirring about 1 minute.
- Add the beans with their liquid cooking over medium heat, stirring frequently.
- Once the liquid evaporates and the beans form a creamy consistency remove from heat.
- Serve warm with shredded cheddar cheese, if desired.
