Carrot Soufflé
Bug out over this carrot souffle. When you want to shake up the same old dishes, this is a great place to start. Loaded with beta carotene, it brings plenty of health benefits to the table.

- 3 cup(s) carrots, cooked until tender
- 1/4 cup(s) plain low fat yogurt
- 2 eggs, beaten
- 1 egg white
- 1/5 cup(s) almond flour
- 1/2 cup(s) brown sugar
- 1/2 teaspoon(s) vanilla
- 1 cooking spray
Directions
- Put carrots, yogurt, eggs, egg white, flour, sugar and vanilla in a blender or food processor.
- Use cooking spray to grease 1-quart baking dish.
- When carrot mixture is smooth, spoon into baking dish.
- Bake at 350 °F for 45 minutes.
- Serve warm.
