- 1 yellow onion, finely chopped
- 1 garlic clove, finely minced
- 6 ounce(s) fontina cheese
- 2 diced chipotle peppers in adobo sauce
- 2 cup(s) shredded chicken
- 4 floz plain low fat yogurt
- 4 cup(s) egg noodles, cooked, drained
- 1/2 cup(s) reduced fat shredded cheddar cheese
- 1 tablespoon(s) extra virgin olive oil
- 1 cooking spray
- 1 cup(s) broccoli, chopped
- 1 dash(es) salt
- 1/2 teaspoon(s) chili powder
Directions
- Preheat oven to 350°F.
- Melt oil in a skillet on medium heat.
- Add onion and garlic; cook for 5 minutes.
- Add cheese, peppers, broccoli, salt and chili powder and stir. Cook until cheese is melted.
- Add chicken and yogurt; mix lightly.
- Spray a 1/1/2 quart casserole dish with cooking spray.
- Place noodles in dish.
- Add chicken mixture.
- Sprinkle with shredded cheese.
- Bake for 20 minutes.
- Serve warm.
