Carrot and Fig Salad
Figs meet carrots. Carrots meet figs. Together, these perfectly complement each other in this side salad. Lemon juice and brown sugar make a gourmet glaze that will be kid-tested, parent-approved.

Recipe
- 6 carrots, medium
- 1 cup(s) black figs
- 1 lemon
- 2 oranges, to taste
- 1/4 cup(s) brown sugar
- 1 dash(es) salt, to taste
- 2 tablespoon(s) poppy seeds
Directions
- Shred carrots finely in a food processor. Then place in a serving bowl.
- Place figs in the bowl with carrots.
- Squeeze the lemon juice onto carrots and figs.
- Mix brown sugar with carrots and figs. Add salt and poppy seeds to the salad, stir and mix.
- Store in the refrigerator then serve when ready.
