- 2 teaspoon(s) salt; divided
- 2 cup(s) spinach
- 2 tablespoon(s) light butter
- 1/4 cup(s) all-purpose flour
- 1 cup(s) skim milk
- 1 tablespoon(s) half and half
- 2 cup(s) onions, chopped
- 1/8 teaspoon(s) nutmeg
- 1 teaspoon(s) pepper
Directions
- Cook spinach in a pot of boiling salt water.
- Stir constantly, until the spinach is wilted; about 1 to 2 minutes.
- Drain and rinse under cold water. Squeeze in a paper towel and remove as much moisture as possible.
- Chop the spinach and set aside.
- Melt the butter in a saucepan.
- Stir in the flour to make a paste.
- Whisk in the milk, and the half-and-half until smooth and cook over high heat for 1 to 2 minutes.
- Mix in the spinach, onions, nutmeg, salt, and pepper.
- Cook until it is heated through.
