Lemon-lime Tilapia with Salsa

- 1 cup(s) chopped tomatoes
- 1/4 cup(s) cilantro
- 1 tablespoon(s) green olives
- 1 tablespoon(s) white wine vinegar
- 1/8 tablespoon(s) anchovy paste
- 4 garlic cloves, minced
- 1 teaspoon(s) olive oil
- 1 dash(es) salt
- 1 dash(es) pepper
- 2/3 cup(s) lemon juice
- 2 2/3 floz water
- 1/4 cup(s) lime juice
- 2 teaspoon(s) adobo seasoning
- 4 tilapia fillets
- 1 cooking spray
Directions
- Combine tomato, cilantro, green olives, white wine vinegar, anchovy paste, 2 cloves of garlic, oil, salt and pepper in a medium bowl. Set aside.
- Whisk the lemon juice, lime juice, water, adobo and the remaining garlic together in a shallow dish.
- Add the tilapia and turn to coat.
- Cover and refrigerate for 1 hour.
- Preheat your broiler to high. Line baking sheet with foil and grease with cooking spray.
- Remove the fish from the marinade and place on baking sheet.
- Broil for about 10 minutes.
- Serve with salsa.
