- 3 3/4 cup(s) canned,reduced sodium black beans
- 2 cup(s) mixed vegetables
- 2 cup(s) frozen corn
- 2 cup(s) frozen chopped broccoli florets
- 2 cup(s) carrot juice, canned
- 1 cup(s) vegetable broth
- 1 cup(s) black bean soup
- 1/4 cup(s) chopped cilantro
- 1/8 teaspoon(s) chili powder
- 1 cup(s) chopped tomatoes
- 1 cup(s) ham, diced
- 1 avocado, chopped
- 1/4 sour cream, fat free
- 1 dash(es) salt
- 1 dash(es) pepper
Directions
- In a large saucepan over medium heat, warm the olive oil.
- Add the black beans, mixed vegetables, corn, broccoli, carrot juice, broth, soup, cilantro, and chili powder.
- Bring to a boil and simmer on low for 30 minutes.
- Stir in fresh tomatoes and heat through.
- In a blender or food processor, puree 2 cups of the soup, then return the mixture to the pan.
- Add the ham and simmer over medium heat until the ham is heated through, about 5 minutes.
- Season with salt and pepper.
- Ladle the soup into warmed bowls.
- Serve topped with avocado and sour cream.
