Bread Omelette

- 2 ounce(s) bread
- 8 tablespoon(s) fat free half and half
- 1/3 cup(s) freshly grated reduced fat Parmesan cheese
- 1 dash(es) salt
- 1 dash(es) pepper
- 4 egg whites
- 1/2 teaspoon(s) nutmeg
- 3 tablespoon(s) fat free evaporated skim milk
- 1 tablespoon(s) olive oil
Directions
- Mash the bread with 1/4 cup of half-and-half cream until the mixture forms a consistent paste.
- Add Parmesan, salt and pepper, nutmeg, and milk and work the mixture together until the consistency is smooth and creamy. Set aside.
- Heat a large frying pan with olive oil.
- Stir in the egg whites and beat with a fork until just mixed.
- Add mixture to the pan. Smooth the top and leave eggs to cook.
- Fold the omelette into thirds and serve.
