Healthier Ham Croquettes

- 2 tablespoon(s) extra virgin olive oil
- 1/2 cup(s) minced onion
- 1/4 teaspoon(s) curry powder
- 1 cup(s) skim milk
- 1/2 cup(s) half and half
- 1/4 teaspoon(s) nutmeg
- 1 tablespoon(s) parsley
- 16 ounce(s) ground smoked ham; cooked
- 2 teaspoon(s) prepared mustard
- 1 cup(s) bread crumbs
- 1 1/2 cup(s) egg substitute
- 1 ounce(s) water
- 16 tablespoon(s) coconut oil
Directions
- In a saucepan, heat olive oil and stir onion and curry powder, flour. Sauté until translucent.
- Gradually add milk and half-and-half. Bring to a boil; cook and stir in nutmeg and parsley and cook for two minutes. Make sure that the sauce is thick.
- Remove from heat and stir in the ham and mustard. Mix well. Cover and chill for 1 hour.
- Shape mixture into logs and roll in bread crumbs.
- Whisk together egg substitute and water.
- Dip ham logs into egg mixture and roll them in the breadcrumbs again.
- Heat coconut oil in a fryer to 375 ºF. Fry croquettes a few at a time for 3 minutes each or until golden brown.
- Drain on paper towels; Serve hot.
