- 2 1/2 cup(s) whole wheat flour
- 1 cup(s) unsweetened applesauce
- 1 cup(s) unsweetened cocoa powder
- 2 teaspoon(s) baking soda
- 1/2 teaspoon(s) salt
- 1 cup(s) unsweetened soy milk
- 2 tablespoon(s) lemon juice
- 6 tablespoon(s) coconut oil
- 1/2 cup(s) mashed banana
- 1 1/2 teaspoon(s) vanilla
- 1 1/2 cup(s) cacao nibs
Directions
- Preheat oven to 400 degrees. Grease 12 large muffin cups; set aside.
- Combine flour, applesauce, cocoa powder, baking soda and salt in a large bowl.
- Combine Unsweetened soy milk, lemon juice, coconut oil, banana and vanilla in small bowl until blended.
- Stir into flour mixture just until moistened.
- Fold in Cacao Nib. Spoon into prepared muffin cups, filling half full.
- Bake 25 to 30 minutes or until toothpick inserted in the center comes out clean.
- Cool in pan on wire rack 5 minutes. Remove from pan.
- Cool for a few minutes. Serve.
