  • 2 whole wheat bread slices
  • 2 tablespoon(s) hummus
  • 2 cherry tomatoes sliced in half
  • 2 cucumber slices, cut in fourths
  • 1 kosher dill pickle, sandwich cut
  • 1/2 cup(s) romaine lettuce
  • 1/4 cup(s) baby spinach
  • 1/2 tablespoon(s) red onion, chopped

Directions

    1. Toast 2 slices of whole wheat toast and spread hummus on each slice
    2. Place tomatoes, cucumber, pickle, lettuce, spinach, and onions on top of one slice and top with other slice hummus down.
    3. Cut in half and enjoy.
