  • 4 chicken breasts, boneless & skinless
  • 1/2 cup(s) all-purpose flour
  • 1/4 teaspoon(s) salt
  • 1/4 teaspoon(s) pepper
  • 2 tablespoon(s) olive oil
  • 2 garlic cloves, minced
  • 1 cup(s) fresh mushrooms, sliced
  • 1/2 teaspoon(s) oregano
  • 1 tablespoon(s) dried parsley
  • 1/2 cup(s) dry Marsala wine
  • 120 mL cooking sherry wine

Directions

    1. Flatten each chicken breast to 1/4-inch thickness placing chicken in between two sheets of plastic wrap. Mix flour, salt and pepper in a bowl. Dip and roll chicken in flour mixture, shaking off excess flour.
    2. In 10-inch skillet, heat oil over medium-high heat. Cook garlic, mushrooms, oregano and parsley in oil 5 minutes, stirring frequently.
    3. Add chicken to skillet. Cook about 8 minutes, turning once, until brown. Add Marsala wine and sherry wine. Cook 8 to 10 minutes or until chicken is no longer pink in center. Serve with pasta.
