Southwestern Salmon Cakes

  • 8 tablespoon(s) light mayonnaise
  • 1/4 cup(s) reduced fat sour cream
  • 1 teaspoon(s) lime zest
  • 4 teaspoon(s) lime juice
  • 3 tablespoon(s) fresh cilantro
  • 1/2 teaspoon(s) salt
  • 1/4 teaspoon(s) pepper
  • 1 1/2 cup(s) panko bread crumbs
  • 16 ounce(s) skinless salmon fillets, finely chopped
  • 1/2 cup(s) green chili peppers, diced finely
  • 2 scallions, sliced thin
  • 1/2 cup(s) olive oil

Directions

    1. Mix light mayonnaise, reduced fat sour cream, lime zest, lime juice, and cilantro in a bowl. Add salt and pepper to taste.
    2. In a shallow bowl add 3/4 cup of panko crumbs. 
    3. In another bowl, combine salmon, chilies, scallions, 3 tbsp. of the mayonnaise mixture, remaining panko crumbs, salt, and pepper.
    4. Form salmon mixture into patties that are about 3 1/2 inches thick. There should be enough for about 4 patties. 
    5. Place patties in panko breadcrumb bowl to cover outside of patty.
    6. Place oil in a skillet on medium-high heat. Add patties once heated up. Cook until golden brown on each side. (about 3-4 minutes per side)
    7. Serve with the remaining mayonnaise mixture.
