Baked Pork Chops with Red Currants

Baked Pork Chops with Red Currants

Ingredients

  • 32 ounce(s) cold water
  • 1/4 cup(s) kosher salt
  • 4 pork chops, cut from the loin, 1/2 inch thick
  • 2 tablespoon(s) extra virgin olive oil
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1 1/2 cup(s) red currants, rinsed
  • 3/4 cup(s) pure maple syrup

Directions

    1. Soak pork chops for two hours in kosher salt and cold water.
    2. Preheat the oven to 350 °F. 
    3. Rinse and dry pork chops.
    4. Heat the extra virgin olive oil in a sauté pan until quite hot.
    5. Remove from the pan, and season well on each side with salt and pepper.
    6. Put a third of the red currants in the bottom of a small baking dish.
    7. Sprinkle 1/4 cups of maple syrup over the red currants.
    8. Lay two of the pork chops side by side on top of the red currants.
    9. Top with the remaining red currants and sprinkle another 1/4 cup of maple syrup over all.
    10. Top with two remaining pork chops, the same as before, and the remaining red currants and maple syrup.
    11. Place a piece of parchment directly on top of the red currants, and a piece of foil directly on top of the parchment.
    12. Cover the baking dish with a tight-fitting lid, or wrap with a double thickness of foil to seal tightly.
    13. Bake in the preheated oven for about 1 hour, until pork chops are tender.
    14. Serve warm.
