Beef and Artichoke Salad

  • 24 ounce(s) boneless beef sirloin steak
  • 1 onion, chopped
  • 2 garlic cloves, finely minced
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 3 tablespoon(s) fat free mayonnaise
  • 1 floz lime juice
  • 1 floz shaved fennel
  • 1/2 teaspoon(s) turmeric
  • 1 3/4 cup(s) can artichoke hearts, rinsed, drained and chopped
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1/2 tablespoon(s) dill

Directions

    1. Grill or broil steak until meat thermometer reaches at least 145°F
    2. Slice across the grain into thin strips.
    3. Heat the oil in a large skillet over medium-high heat for 1 minute.
    4. Add the onion and garlic and cook for about 2 minutes.
    5. Add the beef, salt and pepper and sauté for about 3 minutes.
    6. Transfer to a plate and set aside.
    7. Whisk the mayonnaise, lime juice, fennel, and turmeric in a large bowl.
    8. Add the artichoke hearts, and beef mixture. Stir and season with salt and pepper.
    9. Cover with plastic and wrap and refrigerate for 1 hour.
    10. Line a serving platter with lettuce; top with steak mixture and dressing.
    11. Garnish with dill.
