Black Bean and Corn Salad

  • 3 cup(s) canned black beans, rinsed and drained
  • 1 3/4 cup(s) canned sweet kernel corn, rinsed and drained
  • 3/4 cup(s) fresh cilantro, chopped
  • 1 1/2 cup(s) cherry tomatoes, halved
  • 1 tablespoon(s) olive oil
  • 5 1/3 tablespoon(s) red wine vinegar
  • 2 teaspoon(s) adobo seasoning
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper

Directions

    1. In a medium bowl, mix black beans, corn, cilantro and cherry tomatoes.
    2. Drizzle with enough olive oil to coat entire mixture by stirring.
    3. Add 1/3 cup of red wine vinegar.
    4. Sprinkle adobo seasoning and stir.
    5. Add salt and pepper to taste.
    6. Chill or serve immediately.
