Titillating Tilapia Salad

Ingredients

Recipe

  • 2 tilapia fillets
  • 2 1/2 tablespoon(s) olive oil
  • 1 teaspoon(s) cumin
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1 cucumber, halved lengthwise, sliced thin
  • 1 cup(s) cherry tomatoes
  • 3 tablespoon(s) honey
  • 1 ounce(s) lime juice; divided
  • 2 tablespoon(s) basil
  • 1/2 ounce(s) shaved fennel
  • 3 cup(s) spinach, raw

Directions

    1. Rub the tilapia with 1 tablespoon of oil, cumin, salt, and pepper. Set aside.
    2. Heat 1 tablespoon of oil in a medium skillet over medium-high heat.
    3. In a small bowl, whisk the honey and .5 oz of the lime juice together.
    4. Add the fish brushing it with the honey lime glaze and cook until the it is cooked through and pulls apart with a fork. About 3 to 4 minutes on each side.
    5. Place the cucumber, tomatoes, basil, and fennel leaves in a bowl.
    6. Drizzle with remaining oil and the remaining lime juice.
    7. Place the fish fillets on top of the spinach leaves and add the cucumber mixture. 
    8. Serve immediately.
