Dirty Cajun Style Rice

You don't need to go to NOLA to get some good 'ol Cajun cookin'. Spice up any night with this dirty south Cajun rice. You'll be singin' ooooohhhheeee with the first bite.

Dirty Cajun Style Rice

  • 2 cup(s) enriched rice (4 cups cooked)
  • 4 cup(s) chicken stock
  • 1 pound(s) lean ground turkey
  • 1/2 cup(s) green pepper, chopped
  • 1/2 cup(s) onions, chopped
  • 6 teaspoon(s) garlic, minced
  • 2 tablespoon(s) parsley, dried
  • 6 teaspoon(s) Cajun seasoning, to taste
  • 1 dash(es) salt, to taste

Directions

    1. Wash rice in a colander, add a small amount of oil to the bottom of the rice cooker, add rice and chicken stock and cook, or place rice in a pot and add chicken stock. Bring to a boil then cover and let simmer for about 20 minutes, making sure not to overcook the rice. 
    2. In a warmed skillet, cook ground turkey, bell peppers, onion, garlic and parsley over medium heat. 
    3. Brown ground turkey evenly and make sure it is cooked through, stirring frequently to break up meat.
    4. Cook until meat is browned and vegetables are nice and tender.
    5. Add Cajun seasoning and mix until ground turkey mixture is evenly coated.
    6.  Add cooked rice to mixture, combine and cook until rice is hot, then serve immediately.
