Powerfully Healthy Pasta Primavera

  • 16 ounce(s) whole grain spahetti
  • 1 tablespoon(s) extra virgin olive oil
  • 1 garlic clove, minced
  • 1 red pepper, chopped
  • 1 onion, chopped
  • 1/8 teaspoon(s) crushed red pepper
  • 1 jalapeno pepper, minced
  • 1/2 cup(s) peas
  • 1 bunch of spinach
  • 1 cup(s) grape tomato, halved
  • 3 1/4 cup(s) pasta sauce
  • 1/4 cup(s) fresh basil, chopped
  • 1/2 cup(s) cashews, finely ground

Directions

    1. Cook pasta according to the package directions. 
    2. Heat oil and sauté the onion, garlic and red pepper in a large skillet on medium-heat for 5 minutes.
    3. Add crushed red pepper, jalapeno, peas, and spinach and sauté for about 2 minutes.
    4. Add tomatoes; sauté 2 more minutes.
    5. Add pasta sauce to vegetable mixture and then add it to the pasta.
    6. Top with basil and cashews.
    7. Serve warm.
