1 cooking spray
1 3/4 cup(s) whole wheat flour
1 1/2 teaspoon(s) baking powder
1 dash(es) salt
1 teaspoon(s) nutmeg
3/4 cup(s) pecans
3/4 cup(s) raisins
2ripe bananas
1/3 cup(s) vanilla Greek yogurt
3/4 cup(s) apple butter
1 cup(s) egg substitute
1/8 cup(s) almond milk
4 tablespoon(s) maple syrup
Directions
Preheat oven to 350 °F.
Use cooking spray to coat a 9 x 5-inch loaf pan; set aside.
Whisk together flour, baking powder, salt and nutmeg in a large mixing bowl.
Stir in nuts and raisins. Transfer to a piece of wax paper.
In the same bowl, mash the bananas with a fork.
Whisk together yogurt, apple butter, egg substitute, almond milk, and maple syrup, beating well.
Add dry ingredients and stir.
Pour batter into a prepared pan and bake in the center of the oven for 1 hour or until a toothpick inserted in center comes out clean.
