Herb Roasted Red Potatoes

- 15 small red potatoes about 2 inches in diameter
- 3 tablespoon(s) extra virgin olive oil
- 1 teaspoon(s) salt
- 1/2 teaspoon(s) freshly ground black pepper
- 4 to 5 rosemary sprigs, about 3 inches long
- 6 teaspoon(s) dried sage, or better to use 6 fresh sage sprigs
- 1 teaspoon(s) garlic powder
Directions
- Preheat oven to 325 degrees Fahrenheit.
- Place potatoes in a baking dish that is not too deep but allowing the potatoes to fit tightly into a single layer.
- Pour olive oil over potatoes and turn over the potatoes ensuring that potatoes are evenly coated. Season with garlic powder, salt, and pepper, again turning potatoes to ensure even coating.
- Place rosemary and sage sprigs under potatoes.
- Roast potatoes until you start to see the skins wrinkle and when poked with a toothpick potatoes are tender and soft. This usually takes about an hour and 15 minutes.
- Transfer to serving the dish and serve.
