Recipe

  • 6 hard boiled eggs, chilled and peeled
  • 4 tablespoon(s) light mayonnaise
  • 1 lemon, zest (0.5 tsp) and juice of (1.5 tsp)
  • 1/3 cup(s) celery, finely diced
  • 2 green onions, finely sliced
  • 1 tablespoon(s) fresh parsley, minced
  • 1/8 teaspoon(s) salt, to taste
  • 1/8 teaspoon(s) freshly ground pepper, to taste

Directions

    1. Combine eggs, light mayonnaise, lemon juice, celery, green onions, and parsley in a medium bowl.
    2. With your hands or a potato masher mix egg mixture until desired consistency.
    3. Season with salt and pepper.
    4. Spread over bread, roll or croissant or over a lettuce salad.
