Directions
- Combine eggs, light mayonnaise, lemon juice, celery, green onions, and parsley in a medium bowl.
- With your hands or a potato masher mix egg mixture until desired consistency.
- Season with salt and pepper.
- Spread over bread, roll or croissant or over a lettuce salad.
