3 ounce(s) lean Italian chicken sausage, casing discarded
2cloves garlic, minced
3/4 cup(s) green pepper, chopped
1/2 cup(s) onion, chopped
1 cup(s) sliced button mushrooms
3 cup(s) low sodium chicken broth
115 oz. can chick-peas, rinsed and drained
1can low sodium diced tomatoes, undrained
1 teaspoon(s) dried basil
1/2 teaspoon(s) dried oregano
1/2 teaspoon(s) crushed red pepper flakes
1/4 teaspoon(s) salt
4 ounce(s) light mozzarella, shredded
2 ounce(s) grated Parmesan
Directions
In a large stock pot, cook the sausage and garlic over medium-high heat for 5 minutes. Break the sausage into small bits while it cooks.
Add the green peppers, onion, and mushrooms and cook them until vegetables are softened, about 6 minutes.
Add the remaining ingredients and bring to a boil, covered, about 3 minutes.
