2 cup(s) whole wheat couscous, uncooked
1/4 cup(s) chopped walnuts
1/2 teaspoon(s) salt
24 floz boiling water
1large tomato
1medium cucumber
2 tablespoon(s) chives, chopped
2 tablespoon(s) fresh parsley, chopped
2 tablespoon(s) fresh basil, chopped
2 tablespoon(s) fresh thyme, chopped
4 tablespoon(s) fresh mint
1/4 cup(s) lemon juice
1/4 cup(s) olive oil
1/2 teaspoon(s) garlic, minced
Directions
In a large bowl, stir couscous, walnuts, and salt.
Pour boiling water over couscous and stir to combine.
Let cool for about 15 minutes.
Chop the tomato. Then peel and seed, and chop the cucumber.
Add the cooled couscous with the rest of the ingredients. Stir until well combined.
