Dairy-Free Chocolate Gelato

Dairy-Free Chocolate Gelato

  • 2 ounce(s) bittersweet chocolate
  • 2 1/4 cup(s) almond milk, sweetened
  • 1/3 cup(s) soy cream
  • 3/4 cup(s) sugars, finely granulated
  • 1 cup(s) cocoa powder, unsweetened
  • 4 egg yolks

Directions

    1. Coarsely chop chocolate
    2. In a 2-quart sauce pan, bring milk, soy-cream and half the sugar to a simmer. Stir until sugar is dissolved.
    3. Remove pan from heat. Stir in cocoa powder and chocolate and stir until all chocolate is melted and smooth.
    4. In a water and iced bowl, beat egg yolks and remaining sugar until thick.
    5. Add hot chocolate mixture slowly, taking care not to cook eggs, whisk enire time while adding mixture.
    6. Cook on low heat, stirring occasionaly until thermometer reads 170 degrees F. 
    7. Pour mixture through colander and place in an iced bowl and let cool.
    8. Allow mixture to cool while covered
    9. Freeze mixture in icecream maker and transfer into airtight container. Allow to harden for 1-3 hours in freezer
