Healthy Chicken Stir-Fry

Recipe

  • 2 cloves garlic, minced
  • 1 small chile pepper, minced
  • 1 medium onion, minced
  • 1 cup(s) zucchini, sliced
  • 3 large carrots, with skin, sliced
  • 8 crimini mushrooms, sliced
  • 1 green bell pepper, chopped
  • 2 tablespoon(s) low sodium soy sauce
  • 1 dash(es) salt
  • 1 dash(es) black pepper
  • 2 tablespoon(s) parsley
  • 12 ounce(s) chicken breast

Directions

    1. Chop chicken breasts into  1-to-2 inch cubes. Set aside.
    2. In a skillet over medium-high heat, add 2 tablespoons olive oil and saute garlic, chile pepper, and onion until softened. 
    3. Add chicken cubes and cook until tender.
    4. Add zucchini, carrots, mushrooms, green pepper, soy sauce, salt, and black pepper.
    5. Cook, until vegetables are tender. Add parsley.
    6. Serve.
