Terrific Tex-Mex Tofu Burritos

Recipe

  • 8 flour tortillas
  • 1 tablespoon(s) extra virgin olive oil
  • 3 teaspoon(s) lime juice
  • 3 teaspoon(s) fresh ginger, chopped
  • 6 teaspoon(s) garlic, chopped
  • 1/2 cup(s) cilantro, chopped
  • 2 tablespoon(s) shallots, chopped
  • 1 teaspoon(s) fresh ground pepper
  • 1/8 teaspoon(s) cayenne pepper
  • 2 teaspoon(s) cider vinegar
  • 1 package extra-firm light tofu, drained and cut into 1/2-inch cubes
  • 1 avocado, peeled and mashed
  • 1 tomato, chopped

Directions

    1. Preheat oven to 250ºF.
    2. Place tortillas in oven and warm for 10 minutes.
    3. In a medium bowl place tofu and add 1 tablespoon lime juice, ginger, garlic, cilantro, shallots, black pepper, vinegar and cayenne pepper. Set aside.
    4. In a small bowl, combine the avocado and tomato with a dash of juice.
    5. In a medium skillet, heat the oil over a medium heat and add the tofu.
    6. Spread the warmed tortillas with avocado and fill with the tofu. Roll up the tortilla and serve with chopped tomato.
