- 2 whole wheat bread slices
- 2 tablespoon(s) hummus
- 2 cherry tomatoes sliced in half
- 2 cucumber slices, cut in fourths
- 1 kosher dill pickle, sandwich cut
- 1/2 cup(s) romaine lettuce
- 1/4 cup(s) baby spinach
- 1/2 tablespoon(s) red onion, chopped
Directions
- Toast 2 slices of whole wheat toast and spread hummus on each slice
- Place tomatoes, cucumber, pickle, lettuce, spinach, and onions on top of one slice and top with other slice hummus down.
- Cut in half and enjoy.
