Carrot Soufflé

Bug out over this carrot souffle. When you want to shake up the same old dishes, this is a great place to start. Loaded with beta carotene, it brings plenty of health benefits to the table.

  • 3 cup(s) carrots, cooked until tender
  • 1/4 cup(s) plain low fat yogurt
  • 2 eggs, beaten
  • 1 egg white
  • 1/5 cup(s) almond flour
  • 1/2 cup(s) brown sugar
  • 1/2 teaspoon(s) vanilla
  • 1 cooking spray

Directions

    1. Put carrots, yogurt, eggs, egg white, flour, sugar and vanilla in a blender or food processor.
    2. Use cooking spray to grease 1-quart baking dish.
    3. When carrot mixture is smooth, spoon into baking dish.
    4. Bake at 350 °F for 45 minutes.
    5. Serve warm.
