Grilled Vegetable Vegan Cheese Sandwich

  • 2 whole wheat bread slices
  • 1/4 cup(s) green peppers, chopped
  • 1/4 cup(s) onions, chopped
  • 2 cucumber slices, cut in half
  • 2 grape tomato, sliced in half
  • 1/4 cup(s) romaine lettuce
  • 1/4 cup(s) baby spinach
  • 1 vegan cheddar style slices
  • 1 kosher dill sandwich slices
  • 1 teaspoon(s) spicy brown mustard
  • 1/4 cup(s) alfalfa sprouts
  • 1/2 tablespoon(s) olive oil

Directions

    1. Add oil to skillet, warm on medium heat.
    2. Sauté green peppers and onions for about 2-3 minutes. Set aside.
    3. Place bread slices into pan; add vegan cheese, sautéed peppers and onions, tomatoes, cucumber, lettuce, spinach, and pickle atop of bread slice.
    4. Grill sandwich until crispy and golden brown on both sides.
    5. Remove from heat. Add sprouts and mustard. Cut in half and enjoy!
