Garlic Mashed Potatoes

  • 10 garlic cloves
  • 32 ounce(s) red potatoes
  • 2 teaspoon(s) salt
  • 1/2 cup(s) skim milk
  • 2 cup(s) half and half
  • 1 dash(es) pepper

Directions

    1. Preheat oven to 400 °F. 
    2. Place the garlic on a sheet of aluminum foil and wrap tightly.
    3. Roast for about 30 minutes. and then unwrap.
    4. Peel and dice potatoes. 
    5. Place in a large saucepan, add the salt and cover with water.
    6. Bring to a boil over medium-high heat and then reduce to maintain a rolling boil.
    7. Cook for about 20 minutes.
    8. Remove from the heat and drain.
    9. Heat the milk, half-and-half in a medium saucepan over medium heat for about 5 minutes.
    10. In a large saucepan, combine the potatoes and the roasted garlic, cream mixture, salt and pepper.
    11. Mash with a potato masher.
    12. Serve warm.
