Marvelous Mango and Chicken

The mango doesn't fall far from the tree... and when it does, it goes great in this palate-pleasing poultry dish. Add another healthy chicken recipe to your repertoire. It's the great way to keep it interesting. 

Marvelous Mango and Chicken

Ingredients

  • 1 tablespoon(s) olive oil
  • 1/2 cup(s) scallions
  • 2 garlic cloves, minced
  • 4 boneless, skinless chicken breasts,
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1 teaspoon(s) oregano
  • 2 mangos, peeled and cubed
  • 2 ounce(s) lime juice
  • 1/8 teaspoon(s) nutmeg
  • 8 floz mango juice

Directions

    1. Heat the olive oil in a medium skillet over medium heat.
    2. Sauté scallions and garlic.
    3. Place chicken breast halves in the skillet and sprinkle breasts with salt, pepper and oregano.
    4. Cook 8 minutes on each side. Set aside.
    5. Add mango, lime juice, nutmeg and mango juice to the skillet and cook over medium heat for 8 minutes.
    6. Spoon over chicken breasts halves and serve.
