Healthy Pizza Soup

- 3 ounce(s) lean Italian chicken sausage, casing discarded
- 2 cloves garlic, minced
- 3/4 cup(s) green pepper, chopped
- 1/2 cup(s) onion, chopped
- 1 cup(s) sliced button mushrooms
- 3 cup(s) low sodium chicken broth
- 1 15 oz. can chick-peas, rinsed and drained
- 1 can low sodium diced tomatoes, undrained
- 1 teaspoon(s) dried basil
- 1/2 teaspoon(s) dried oregano
- 1/2 teaspoon(s) crushed red pepper flakes
- 1/4 teaspoon(s) salt
- 4 ounce(s) light mozzarella, shredded
- 2 ounce(s) grated Parmesan
Directions
- In a large stock pot, cook the sausage and garlic over medium-high heat for 5 minutes. Break the sausage into small bits while it cooks.
- Add the green peppers, onion, and mushrooms and cook them until vegetables are softened, about 6 minutes.
- Add the remaining ingredients and bring to a boil, covered, about 3 minutes.
- Sprinkle mozzarella and Parmesan over the soup.
- Serve and enjoy.
