Spanish Style Quinoa

  • 1 cup(s) dry quinoa, rinsed drained and patted dry
  • 1/4 cup(s) onion, chopped
  • 2 cup(s) organic low sodium vegetable broth
  • 1/2 cup(s) organic tomato sauce
  • 2 teaspoon(s) chili powder
  • 1/4 teaspoon(s) garlic powder
  • 1/4 teaspoon(s) ground cumin
  • 1/4 teaspoon(s) salt, to taste
  • 1/4 teaspoon(s) pepper, to taste
  • 2 tablespoon(s) fresh cilantro, for garnish

Directions

    1. In a large saucepan over medium heat.
    2. Add quinoa and cook until golden brown, about 4-5 minutes.
    3. Add onion, broth, tomato sauce, garlic powder, ground cumin and chili powder and bring to a boil.
    4. Cover and reduce heat to low. Simmer for 20 minutes.
    5. Remove from heat, fluff with a fork and season with salt and pepper.
    6. Garnish with chopped cilantro.
    7. Serve and enjoy.
