 Grilled Rotisserie Chicken

  • 48 ounce(s) whole chicken
  • 2 tablespoon(s) salt
  • 1/2 juice of lemon
  • 1 ounce(s) rosemary
  • 2 tablespoon(s) extra virgin olive oil
  • 1 tablespoon(s) chili powder
  • 2 teaspoon(s) pepper

Directions

    1. Preheat the grill for 15 minutes.
    2. Meanwhile, remove the giblets and neck from the chicken's  body cavity.
    3. Season with 1 tablespoon of salt, lemon, and rosemary.
    4. Place the chicken onto a rotisserie and set the grill on high.
    5. Cook for 10 minutes.
    6. Meanwhile, mix oil, chili powder, and pepper.
    7. Turn the grill down to medium and baste the chicken with oil mixture.
    8. Cook for 1 hour and 15 minutes. Use a meat thermometer to check the internal temperature of the chicken. The temperature must register 165 degrees F in the breast area and 180 degrees F in the thigh. 
    9. When the chicken is done. place it on serving platter and let it stand for 15 minutes.
    10. Cut into pieces and serve.
