1 cup(s) egg whites
1/8 teaspoon(s) salt
1/8 teaspoon(s) pepper
1/2 tablespoon(s) olive oil
1/2 cup(s) sliced mushrooms
1/2 cup(s) spinach, chopped
1/8 cup(s) reduced fat cheddar cheese
Directions
In a small bowl, whisk egg whites, salt and pepper.
In a nonstick skillet, heat olive oil over medium heat.
Add mushrooms and cook for about 5 minutes.
Add spinach and cook until wilted.
Reduce heat and add egg mixture.
Add in cheese and stir for 1-2 minutes until melted.
