Chicken with Creamy Broccoli Pesto Bow Ties

Chicken with Creamy Broccoli Pesto Bow Ties

  • 16 ounce(s) rotisserie chicken, shredded
  • 2 cup(s) broccoli florets
  • 1 dash(es) salt, to taste
  • 1 dash(es) Freshly Ground Pepper
  • 1/4 cup(s) Fresh basil
  • 2 garlic cloves
  • 1/4 cup(s) olive oil
  • 2 teaspoon(s) lemon zest
  • 3 ounce(s) Parmesan cheese
  • 1/2 cup(s) low-fat cream cheese

Directions

    1. Boil salted water, add broccoli florets and cook until tender. Drain and place in bowl for later use.
    2. Cook pasta as per directions on box, drain 
    3. Place basil, garlic, oil, lemon zest, red pepper and Parmesan in a food processor or blender until finely ground.
    4. Add broccoli and pulse four to five times until coarsely chopped. Salt and pepper to taste.
    5. Stir broccoli pesto and cream cheese into pasta until well blended. 
    6. Add shredded chicken. Serve and enjoy!
