  • 1/4 cup(s) fat- free reduced sodium chicken broth
  • 2 tablespoon(s) red wine vinegar
  • 1 teaspoon(s) sugars, granulated
  • 1 teaspoon(s) dried oregano
  • 3/4 cup(s) olive oil
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • 16 ounce(s) ( 4 oz each ) boneless skinless chicken breast halves
  • 1 cooking spray
  • 6 cup(s) fresh romaine Lettuce, Chopped
  • 3/4 cup(s) cherry tomatoes, halved
  • 1/2 cup(s) red onions, thinly sliced
  • 1/2 cup(s) cucumbers, peeled and sliced
  • 1 cup(s) fat free crumbled feta cheese
  • 16 black olives, pitted
  • 2 tablespoon(s) scallions, chopped
  • 1/2 tablespoon(s) dried basil
  • 3 teaspoon(s) garlic, finely chopped
  • 1 teaspoon(s) thyme
  • 1/8 teaspoon(s) cayenne pepper

Directions

    1. Prepare grill or broiler.
    2. Combine the chicken broth, red wine vinegar, sugar, salt, oregano and olive oil in a small bowl.
    3. Brush the chicken with 2 tablespoons dressing; set remaining dressing aside.
    4. Place chicken on grill rack or broiler pan coated with cooking spray; cook for 5 minutes on each side or until chicken is done. Cut into 1/4-inch-thick slices.
    5. In a large bowl, combine lettuce, tomatoes, onions, cucumbers, feta cheese, olives and scallions.
    6. Add remaining dressing, basil, garlic, thyme, black pepper and cayenne pepper.
    7. Top with sliced chicken.
    8. Serve immediately.
