Super Spinach, Kale and Quinoa Salad

Super Spinach, Kale and Quinoa Salad

Ingredients

  • 1 cup(s) quinoa
  • 1/8 teaspoon(s) sea salt
  • 1/2 cup(s) slivered almonds
  • 1 garlic clove
  • 3 cup(s) baby spinach
  • 3 cup(s) kale
  • 4 ounce(s) shaved fennel
  • 1/4 cup(s) basil
  • 1/4 cup(s) lemon juice
  • 4 tablespoon(s) extra virgin olive oil
  • 1 dash(es) pepper

Directions

    1. Measure 1 cup of quinoa and place into a fine-mesh strainer.
    2. Rinse thoroughly with cool water for about 2 minutes.
    3. Rub and swish the quinoa with your hand while rinsing.
    4. Drain and transfer to a medium saucepan.
    5. Stir in broth and the salt. Bring to a rolling boil. 
    6. Lower heat and cover.
    7. Cook until water is absorbed, about 15 minutes.
    8. Let sit, covered for 10 minutes. 
    9. Set aside and allow to cool for 5 minutes.
    10. Add almond slices, garlic, spinach, kale, fennel, basil, lemon juice, oil and pepper.
    11. Toss to combine.
    12. Serve warm.
