Chicken Wraps

  • 12 ounce(s) boneless skinless chicken breasts
  • 1 1/2 tablespoon(s) extra virgin olive oil
  • 1/8 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • 1/2 cup(s) plain yogurt
  • 2 tablespoon(s) white wine vinegar
  • 1 tablespoon(s) lemon juice
  • 1/2 ounce(s) shaved fennel
  • 1 garlic clove
  • 4 whole wheat tortillas
  • 1/2 cup(s) feta cheese

Directions

    1. Preheat grill to medium-high heat.
    2. Rub the chicken breasts with oil.
    3. Sprinkle with salt and pepper. Place chicken on the grill, and grill for 5 minutes on each side.
    4. Let cook for 15 minutes to slightly cool.
    5. Finely dice the chicken and set aside. 
    6. Combine yogurt, vinegar, lemon juice, fennel leaves and garlic in a small bowl; toss.
    7. Spread on each of the tortillas.
    8. Divide chicken mixture evenly among tortillas.
    9. Top each serving with feta.
    10. Serve.
