Lemon Chicken with Brown Rice

Lemon Chicken with Brown Rice

  • 1 cooking spray
  • 1 green onion, chopped
  • 1 cup(s) long-grain brown rice
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) pepper
  • 2 1/2 cup(s) vegetable broth
  • 1 garlic clove, minced
  • 1 teaspoon(s) oregano
  • 1 tablespoon(s) parsley
  • 4 chicken breasts
  • 2 teaspoon(s) chicken bouillon
  • 2 tablespoon(s) cornstarch
  • 12 floz water
  • 1/4 cup(s) lemon juice

Directions

    1. Use cooking spray to coat a 2-quart saucepan over medium heat. Add the green onion and sauté until tender. 
    2. Add the rice and stir. Season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper.
    3. Add the stock, garlic and oregano.
    4. Cover with a tight lid and cook for 40 minutes, turn off heat and let sit for 10 minutes.
    5. Fluff with a fork and add parsley and green onions.
    6. Meanwhile, cut each chicken breast in half lengthwise and season with salt and pepper.
    7. Coat a large sauté pan with cooking spray and place over medium-high heat.
    8. Add the chicken and cook for 5-minutes on each side, or until lightly browned.
    9. Combine the bouillon and cornstarch in a small bowl and slowly stir in the water until smooth.
    10. Pour the mixture into the pan and cook over medium heat, stirring occasionally, until mixture starts to thicken.
    11. Add the lemon juice and cook for 2 to 3 minutes, until the sauce begins to boil. 
    12. Divide the rice between four plates, arrange the chicken over the rice and top with the sauce. Serve warm.
