Lemon Chicken with Brown Rice
When life hands you lemons, make lemon chicken! Serve up this zesty, flavorful and wholesome dish for company or anytime.

- 1 cooking spray
- 1 green onion, chopped
- 1 cup(s) long-grain brown rice
- 1 teaspoon(s) salt
- 1 teaspoon(s) pepper
- 2 1/2 cup(s) vegetable broth
- 1 garlic clove, minced
- 1 teaspoon(s) oregano
- 1 tablespoon(s) parsley
- 4 chicken breasts
- 2 teaspoon(s) chicken bouillon
- 2 tablespoon(s) cornstarch
- 12 floz water
- 1/4 cup(s) lemon juice
Directions
- Use cooking spray to coat a 2-quart saucepan over medium heat. Add the green onion and sauté until tender.
- Add the rice and stir. Season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper.
- Add the stock, garlic and oregano.
- Cover with a tight lid and cook for 40 minutes, turn off heat and let sit for 10 minutes.
- Fluff with a fork and add parsley and green onions.
- Meanwhile, cut each chicken breast in half lengthwise and season with salt and pepper.
- Coat a large sauté pan with cooking spray and place over medium-high heat.
- Add the chicken and cook for 5-minutes on each side, or until lightly browned.
- Combine the bouillon and cornstarch in a small bowl and slowly stir in the water until smooth.
- Pour the mixture into the pan and cook over medium heat, stirring occasionally, until mixture starts to thicken.
- Add the lemon juice and cook for 2 to 3 minutes, until the sauce begins to boil.
- Divide the rice between four plates, arrange the chicken over the rice and top with the sauce. Serve warm.
