2 cup(s) spinach
2 tablespoon(s) light butter
1/4 cup(s) all-purpose flour
1 cup(s) skim milk
1 tablespoon(s) half and half
2 cup(s) onions, chopped
1/8 teaspoon(s) nutmeg
1 teaspoon(s) pepper
Directions
Cook spinach in a pot of boiling salt water.
Stir constantly, until the spinach is wilted; about 1 to 2 minutes.
Drain and rinse under cold water. Squeeze in a paper towel and remove as much moisture as possible.
Chop the spinach and set aside.
Melt the butter in a saucepan.
Stir in the flour to make a paste.
Whisk in the milk, and the half-and-half until smooth and cook over high heat for 1 to 2 minutes.
Mix in the spinach, onions, nutmeg, salt, and pepper.
