Vegetarian Spinach Risotto

- 1 package frozen chopped spinach
- 1/8 cup(s) unsweetened applesauce
- 1 onion, chopped
- 1 clove garlic, minced
- 2 cup(s) uncooked rice
- 4 cup(s) vegetable stock
Directions
- Combine spinach, applesauce, onion and garlic in saucepan.
- Cook over medium heat, stirring occasionally.
- Place mixture in blender and process until smooth, return to pan.
- Add brown rice and vegetable stock; cover.
- Cook on low heat for about 15 to 20 minutes or until rice is soft and fluffy. Serve.
