3 3/4 cup(s) canned,reduced sodium black beans
2 cup(s) mixed vegetables
2 cup(s) frozen corn
2 cup(s) frozen chopped broccoli florets
2 cup(s) carrot juice, canned
1 cup(s) vegetable broth
1 cup(s) black bean soup
1/4 cup(s) chopped cilantro
1/8 teaspoon(s) chili powder
1 cup(s) chopped tomatoes
1 cup(s) ham, diced
1avocado, chopped
1/4sour cream, fat free
1 dash(es) salt
1 dash(es) pepper
Directions
In a large saucepan over medium heat, warm the olive oil.
Add the black beans, mixed vegetables, corn, broccoli, carrot juice, broth, soup, cilantro, and chili powder.
Bring to a boil and simmer on low for 30 minutes.
Stir in fresh tomatoes and heat through.
In a blender or food processor, puree 2 cups of the soup, then return the mixture to the pan.
Add the ham and simmer over medium heat until the ham is heated through, about 5 minutes.
