  • 2 ounce(s) bread
  • 8 tablespoon(s) fat free half and half
  • 1/3 cup(s) freshly grated reduced fat Parmesan cheese
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 4 egg whites
  • 1/2 teaspoon(s) nutmeg
  • 3 tablespoon(s) fat free evaporated skim milk
  • 1 tablespoon(s) olive oil

Directions

    1. Mash the bread with 1/4 cup of half-and-half cream until the mixture forms a consistent paste.
    2. Add Parmesan, salt and pepper, nutmeg, and milk and work the mixture together until the consistency is smooth and creamy. Set aside.
    3. Heat a large frying pan with olive oil.
    4. Stir in the egg whites and beat with a fork until just mixed.
    5. Add mixture to the pan. Smooth the top and leave eggs to cook.
    6. Fold the omelette into thirds and serve.
