Grilled Chicken and Spinach Salad

  • 16 ounce(s) chicken, quartered, rinsed and patted dry
  • 1 teaspoon(s) salt
  • 1 teaspoon(s) pepper
  • 1 package baby spinach
  • 1 onions, sliced
  • 8 kalmata olives
  • 4 tablespoon(s) light Italian dressing
  • 1 orange, peeled and chopped

Directions

    1. Preheat grill to medium-high heat.
    2. Combine salt and pepper. Rub chicken with mixture.
    3. Place chicken on the grill. Close cover and grill 8 minutes on each side. Set aside.
    4. Place spinach in a large bowl.
    5. Toss the onion, olives, and orange on top of the spinach.
    6. Chop chicken into bite size pieces and add to salad.
    7. Dress the salad lightly with dressing and serve.
